1. Turkey Pot Pie:
A great way to use your leftover turkey, mashed potatoes, gravy, and vegetables to make a delicious pot pie. Simply layer the ingredients in a casserole dish, top it with a puff pastry crust and bake for about 30 minutes. Serve with extra gravy on the side and you’ve got yourself a hearty meal that tastes even better than Thanksgiving dinner!
2. Leftover Turkey Bolognese:
If you’re in the mood for Italian food, this is a great way to use your leftover turkey. Start by shredding the meat and sautéing it with fresh garlic and onions. Then add some tomato paste, white wine, red pepper flakes, oregano and Worcestershire sauce. Simmer with your favorite pasta and serve with a sprinkle of Parmesan cheese.
3. Turkey Enchiladas:
This is a great way to use up all of that leftover turkey! Make a simple enchilada sauce with tomato paste, garlic powder, chili powder, cumin and oregano. Then fill tortillas with the turkey, cheese and your favorite veggies and roll them up. Place in a baking dish and top with enchilada sauce and extra cheese, bake for about 25 minutes until golden brown. Serve with a dollop of sour cream and you’ve got yourself a delicious meal!
4. Mashed Potato Patties:
Start by mashing together cooked potatoes, butter, salt and pepper to taste. Form the mashed potato mixture into small patties and lightly coat them in seasoned bread crumbs. Fry the patties in a skillet with oil until golden brown on each side. Serve as a delicious side dish or with a dollop of gravy.
