Easy and Amazing Christmas Dinner

It’s that time of year again! You want to impress everyone, but you don’t want the hassle of making a Christmas dinner that requires your constant attention. Let the culinary whizzes in the RISE Real Estate office help with some of our favorite, super easy Christmas dinner recipes to help you create a feast to remember! 

Christmas Chicken Stew
From the old country, with love

4 x chicken breasts
2 x gallons of apple cider
1 x diced onion
1 x diced apple
3 x bay leaves**
6 x diced garlic cloves
Freshly chopped sage
Freshly chopped thyme
10 x peeled and chopped chestnuts
Salt and pepper
Olive oil
Butter*

* remove before serving 
** butter substitutes work just as well

• Fry the diced onion and garlic in olive oil and butter 
• Add all the apple cider
• Bring to a boil
• Add all other ingredients and cook on medium until the chicken has fallen apart like pulled pork (3-4 hours)

Tomato and onion crumble
A yummy, flavorsome bake that makes a great hearty side!

1 x large can of diced tomatoes
1 x finely chopped Spanish onion
5 x finely chopped garlic cloves
Breadcrumbs*
Butter **
Olive oil
Freshly chopped oregano
Salt and pepper

* gluten free breadcrumbs work just as well
** butter substitutes work just as well

• Fry the diced onions and garlic in olive oil until sautéed 
• Take off heat and add to casserole dish with can of tomatoes – stir together
• Add freshly chopped oregano to casserole dish – stir together
• Season with salt and pepper – stir together
• Cover mixture with breadcrumbs  
• Place chunk of butter on top of breadcrumbs
• Cover and cook for 45 minutes at 375F – broil the breadcrumbs at the end for crunch

Amazing Mashed Potatoes
A classic with a bit of an extra flavor factor!

6 x unpeeled, chopped potatoes
Powdered nutmeg
(Lots of) butter *
Salt and pepper

* butter substitutes work just as well

• Boil the chopped potatoes until soft 
• Mash with a lot of butter (you want this creamy)
• Sprinkle powdered nutmeg until you can smell it
• Add salt and pepper to taste
