Delicious (and Effortless) Thanksgiving Recipes

Halloween is in the bag, which means the holiday season is officially upon us! With Thanksgiving just around the corner, and Christmas soon coming knocking, here are three delicious and stress-free holiday classics to make your day all that more special (and tasty).

Turkey

Ingredients:
    • 1 10-12lb turkey
    • 2  sticks butter
    • 1 lemon, zested and juiced
    • 4 teaspoon chopped thyme leaves
    • 4 teaspoon chopped rosemary leaves
    • 1 large bunch fresh thyme
    • 1 whole lemon, quartered
    • 1 Spanish onion, quartered
    • 8 cloves garlic, sliced in two
    • Salt and pepper
Directions:
  • Preheat the oven to 375F
  • Clean the turkey cavity, if required, removing internal giblets
  • Stuff garlic halves under the skin of the turkey in even intervals
  • Place the onion quarters inside the cavity with a liberal amount of herbs and the bunch of thyme
  • Melt the butter and mix lemon juice with remaining herbs
  • Glaze the turkey skin with the butter and lemon juice mix
  • Garnish with salt and pepper
  • Roast the turkey for about 2 1/2 hours, or until the juices run clear
  • Remove turkey from the oven and place on a cutting board
  • Cover with aluminum foil and allow to rest for 20 minutes.

Roast Potatoes

Ingredients:
  • 8 x boiled potatoes, unskinned potatoes, quartered
  • 1 x stick butter
  • 2 teaspoon chopped thyme leaves
  • 4 teaspoon chopped rosemary leaves
  • 6 cloves garlic, sliced in two
  • Salt and pepper
Directions:
  • Preheat the oven to 375F
  • Place lumps of butter in grease-proof baking tray
  • Sprinkle half the herbs around the buttered tray
  • Place the garlic evenly across the buttered tray
  • Place the tray in the oven to preheat until butter is melted and sizzling
  • While the butter melts, take the boiled and drained potatoes, and shake them about in the pan they were boiled in until the edges roughen
  • Place the potatoes on the melted butter, sprinkling herbs, salt, and pepper on top
  • Roast until golden brown, rotate until all sides are cooked and crisp

Stuffing

Ingredients:
  • 2 lb ground pork
  • 1 oz chopped fresh sage
  • ¼ stick of butter
  • ½ oz chopped thyme
  • 3 oz breadcrumbs made from bread left out overnight
  • 1 finely chopped onion
  • Salt and pepper
Directions:
  • Saute the onion in butter
  • Combine the breadcrumbs with the sage and onion in a large mixing bowl
  • Stir in 2 tablespoons of boiling water
  • Mix thoroughly
  • Work ground pork into mixture
  • Season with salt and pepper
  • Leave overnight to sit
  • Preheat oven to 400 degrees.
  • Cover stuffing with foil and bake for 25 minutes
  • Remove foil and bake until crispy approx. 15 minutes longer.
